Smokey Omelette

I wasn’t sure if I was going to cook anything today. I had the idea I would use a few of the leftover hamburger rolls from this past Monday cookout. I was imagining a simpled grilled egg and cheese sandwich. That didn’t happen. I just started pulling out some things and decided I was going to make an omelette. I almost decided I didn’t want to make one as the cleanup is a lot more. And the prep is more involved. My wanting to do something with the sour cream won over though.

Mmmm. This was a lovely meal for me. I had been wanting to do something with a sour cream sauce of sorts. I couldn’t really figure something out for it. Yesterday I looked up a few ideas, but I couldn’t remember anything today. I pulled out a few things to season the sour cream with, and then finished with picking out things I figured would work well with the flavor I was creating. The end result worked very well on my taste buds.

Smokey Omelette

Makes 1 Serving
- 2 eggs
- salt
- pepper
- milk
- cilantro
- chili powder
- smoked paprika
- verde sauce
- sour cream
- garlic (powder or finely diced fresh)
- diced onions
- diced tomatoes
- reasonably thinly sliced mushrooms

Spray two medium sized pans with nonstick spray. Place both on medium heat to preheat pans.

Dice onions while pans preheat. Place in one pan and lower to medium-low heat. After a few minutes, if you have fresh garlic, add the finely diced garlic.

In one bowl, mix eggs, salt and pepper to taste, a teaspoon of cilantro, and a teaspoon or two of milk. Pour mixture evenly into the bottom of the second preheated pan and lower heat to medium-low.

In a second bowl, mix a few spoonfuls of sour cream with a spoonful of the verde sauce and a shake or two of both chili powder and smoked paprika.

Cut mushrooms into about a quarter inch slices and place into pan with onions. Add salt and pepper to taste. Toss them around and let cook a bit. If mushrooms are done before egg mixture is flipped, turn off heat to onions/mushrooms.

When the egg mixture starts to look like it is mostly cooked through, flip it. On one half of the egg, arrange your pepper jack cheese. Smear a spoonful or two of your sour cream mixture over the cheese. Add your onions, mushrooms, and tomato. Fold the omelette in half and let sit for a minute to melt your cheese.

Serve right away and enjoy!

Yum! I really enjoyed this one. That is all I have to say.

My husband thought it was very pretty when I served it to him. However, he said I added a bit too much pepper and smoked paprika. I made him a second omelette and ate his. This second one didn’t have any of the sour cream mixture and he was very pleased.
