My hubby pulled some chicken out of the freezer this morning. I wasn’t sure if he wanted me to make dinner or if he had plans on making something himself. So I asked. He was pretty much hoping I made something for over rice. So, while I played some ‘Portal 2′ this afternoon, I tried to think of what I would do with the chicken.
Now, I usually do something with cheese, tortillas, or simple grilled chicken sandwiches. Hubby wanted rice. I don’t like rice. I don’t really like pasta either. Playing the game didn’t really help. I didn’t want to think about cooking something for rice. After a bit, I decided to go downstairs and see what I could do. I don’t know why I picked the things I did, I just ended up picking out all the veggies we had. That didn’t seem like it was good enough. So I checked things out again in the fridge. My eyes spied the apples and I figured mushrooms and apples would go well enough together. And so dinner began.
Note: I didn’t add rice or egg noodles to this recipe. We chose to put the chicken over rice. I think it would have went very well over egg noodles too. If you actually choose to try to make something like this, pick out your favorite of rice or noodles and have fun! I also diced up some grape tomatoes into the chicken. I was snacking on them while prepared the veggies. They aren’t anything necessary so I left them out of the list of ingredients.
Apple, Mushroom Chicken
Makes A LOT
- 3 lb skinless boneless chicken breast
- 1 diced onion
- 3 apples
- 1/2 cup diced mushrooms
- 3 cloves minced garlic
- 1 can cream of mushroom
- salt
- pepper
- 1/2 tsp mustard powder
- 1/2 tsp dried chopped basil
- 1/4 tsp ground thyme
- 1-2 tsp sour creamCoat bottom of large sauce pan with olive oil and preheat on stove at medium.
Cut chicken into about one inch chunks and season to taste with salt and pepper. Place in preheated pan to cook. Season with mustard powder, thyme, and basil. Toss/check chicken occasionally to be sure of even cooking.
While chicken is cooking, dice the onions, mushrooms, and garlic cloves into small pieces. Dice apple into small to medium pieces. Add onions to cooking chicken. After a minute or two, add garlic and cook for another minute.
When chicken is almost cooked completely, add the apples, sour cream and cream of mushroom. Stir and cover sauce pan and lower heat to simmer for at least ten minutes. Stir occasionally.
When ready to eat, prepare either rice or egg noodles as directed on packaging. Serve chicken mixture over rice/egg noodles and enjoy!

This meal didn’t turn out exactly how I wanted. It was OK. I would have preferred to make a cream based sauce on my own, but I did not have any heavy cream. The glass of wine and grapes we had on the side were actually a very nice compliment to this meal. I think if I added raisins to the chicken it would have been very good! Also maybe some sliced almonds or cashews. I’ll try to remember that for next time I try to play with chicken for dinner.
